This post is by Rachel Bauman, one of Ruth's first cheesemakers. If you shop at the Stratford Farmers' Market you'll know her from the Monforte stall. Rachel doesn't have a computer, so she wrote this out by hand, gave it to Ruth, who gave it to me.
"We can hardly wait to make cheese.
I can hardly wait to scoop riccota, flip Toscano, and sing with my head in the cheese vat.
To bag Bella, scrub drains and push flat slabs of cheddar into Eyores noisy jaws.
To scoop yogurt, fish for halloumi and eat creme fraiche with chocolate cookies.
To herb Piaciere, ash black sheep, and go to the market and say: "Yes, we have Blossom!"
