It's amazing how fast the build is coming together. We're getting very excited. We're expecting our first delivery of milk on May 17 and will have our first fresh cheeses the next day when the dairy store opens.
But there's still so much to do: protocols to finish writing, protocol approvel, inspection and certification. Usually it takes six months to build a dairy and we're attempting to do it in six weeks. Ruth is that impatient to get going.

white coats turn up, because they'd have seen it all anyway.
