Meet Kelsie Parsons

Kelsie is one of our new apprentice cheesemakers. He'll be joining Monforte at the end of April.

Kelsie spent the day in Stratford today (he's moving here from Toronto) apartment hunting and hanging out. The plan was to go up to Millbank this morning with Ruth and Daniel to cut cheese for the markets tomorrow and load up the Mazda, but the roads were so bad, they never made it and turned around.

Kelsie has been working in Toronto as a cheesemonger. He's studied cheesemaking at the Vermont Institute of Artisan cheese, where Ruth also takes classes. Kelsie will continue with classes as well as learn from Ruth while working in the dairy.

Kelsie's favourite Monforte cheese is Bauman's Smoke. He likes to serve it in garlic mashed potatoes, in a burger or just on it's own with a dark beer.
