We had a 6 p.m. meeting at the dairy yesterday to discuss planning details for the Hootenanny. Only 24 days left. Everyone who's purchased a CSA Subscription is invited to this grand opening celebration and thank-you. If you want to come to this big party with great music, delicious food prepared by some of Toronto's top chefs who are generously donating their time and talent in support of Monforte, plus dairy tours, there's still time to sign up.
But I digress.
I got an email earlier in the day that the walls and floors were going in over the next two days. It was very exciting to see how the build is coming along.
Upon arriving to the meeting, Ruth excitedly told me we're installing two cameras that will be linked to the web so you can check out what's happening at the dairy live! One will be permanently installed in the make room while the other willl be moved around so you can watch cheese ripening. Won't that be fun. Maybe we'll do celebrity interview with Toscano:
MondoMonforteVision! TV that's ripe for viewing!
Interviewer: "How are you feeling today?"
Toscano: "Well the mold is coming along fine. I think this is my best work."
Sorry. Here are the latest photos:

This grid on the floor will form the shape of the rooms for making cheese and ripening.
The wall material is stacked out back.

View out the open back door, what will be the loading bay.
Boarded up side door. Part of this section will hold a viewing window into the make room and ripening rooms.
